THE BEST SUMMER SALAD WITHOUT ANY LETTUCE

With each summer comes the opportunity to try something new, and for many it ushers in a dedication to new, healthier habits. Some aspects come easier than others, and adding things like hot girl walks and new recipes into one’s life can look different for everyone. In particular, figuring out how to make food that is easy to make, healthy, filling, and tastes good can be especially challenging. A default choice for many people when it comes to quick, clean meals is a salad, but they can be kind of boring and not everyone enjoys lettuce. If that’s true for anyone reading this, this recipe is a great way to put a twist on a boring salad. 

When looking for any new recipe, Pinterest is a great resource, and the following recipe for a shrimp salad is proof. Shrimp probably isn’t the first ingredient that comes to mind when it comes to salad, but it’s a great addition to any combination of the vegetables sitting in the average fridge. While getting ready to chop everything for the salad, consider what might be nearing its expiration date and use it before it goes to waste, especially for anyone who wants to swap out the usual salad base of lettuce for something else. A great option is chopped peppers.

Ingredients: 

  • 1 can of sweet corn 

  • 1 cup of fresh shrimp 

  • 2 tbsp of olive oil 

  • 1 ½ cup of cherry tomatoes

  • 1 bunch of fresh cilantro (chopped finely)

  • ¼ cup red onion (more or less your choice)

  • 1 avocado (pitted & cubed)

  • 1 lime (squeezed) 

  • ⅔ cup feta cheese 

  • Spice mix: 

    • 1 tbsp salt

    • ½ tbsp black pepper 

    • ½ tbsp garlic powder 

    • ½ tbsp onion powder 

    • ½ tbsp paprika 

Instructions:

  • Start by covering your shrimp with 1 tbsp of olive oil and about half of the spice mix.

  • Then, place the shrimp on the grill or on a skillet over medium heat, cook for about 4 minutes on each side, or until shrimp is fully cooked, and set aside.

  • Chop up the cherry tomatoes, red onion, and avocado.

  • In a large salad bowl, add the sweet corn, cherry tomatoes, red onion, avocado, lime juice, feta, olive oil, and remaining spice mix

  • Mix well, then add in your shrimp, add salt as needed, and keep chilled until serving.
